Founder & Head Chef of Viva Zapata

Hi, I’m Bernardino Lanche, and I’m the heart
and soul behind the kitchen at Viva Zapata. My
journey to opening this restaurant started long
before I ever dreamed of owning my own place
—it began in the kitchens of my family, where I
learned the art of cooking with love, tradition,
and the freshest ingredients.
