Our journey began with a love for authentic Mexican cuisine, passed down through generations and rooted in the traditions of our family and the vibrant heart of Mexico.

Founded in 2021, Viva Zapata was born from a passion for bringing the true flavors of Mexico to New Haven. Our founder, Bernardino Lanche, grew up in Hidalgo, where cooking was an essential part of life. Inspired by childhood memories of family gatherings and the diverse, bold flavors that define Mexican cooking, he set out to create a space where people could experience the warmth, hospitality, and authenticity of Mexican dining.

From our handmade tortillas to our signature salsas, every dish is carefully crafted using traditional recipes and high-quality ingredients. Over the years, we’ve grown from a small local eatery to a beloved spot in the community, but our commitment to authenticity and family values remains the same.

Hi, I’m Bernardino Lanche, and I’m the heart and soul behind the kitchen at Viva Zapata. My journey to opening this restaurant started long before I ever dreamed of owning my own place—it began in the kitchens of my family, where I learned the art of cooking with love, tradition, and the freshest ingredients.

I grew up in Hidalgo, Mexico, where food was more than just a meal—it was a way to bring people together. From my grandmother’s mole to my mother’s tamales, every dish told a story and every ingredient had a purpose. These flavors became my foundation, and I knew one day I wanted to share them with the world.

In 2021, I opened Viva Zapata on one of my favorite holidays, Three Kings Day. My goal was simple, to create an authentic Mexican dining experience that captures the essence of my roots. Each dish on our menu is a reflection of my passion for the cuisine and my commitment to providing you with a warm, welcoming space to enjoy it. Whether you’re trying a dish for the first time or returning for your favorite, I want you to feel like part of the family.
